APPLICATIONS OF NMR SPECTROSCOPY IN FOOD & BEVERAGES SECTOR


Authenticity of extra virgin olive oil. The adulteration of virgin olive oil by seed-oils is studied using an in-house patented methodology based on high resolution 13C NMR profiling. This activity was the vehicle for the participation of IOPC in the European Competitive research programmes BCR, AIR2 and GROWTH.

Authenticity of the traditional Cypriot beverage "Zivania". 1H NMR spectroscopy has been successfully applied for the discrimination of "Zivania" from similar competitive distillates of different origin.

Wine-omics. Metabolomics constitutes a constantly growing scientific field that focuses oin high-throughput analysis of metabolites in complex mixtures (biological fluids, food, alcoholic drinks). In order to access an integrated metabolic profile, the application of state-of-the art methodologies is necessary, such as HR NMR and MS spectroscopies. Wine-metabolomics is a promising new approach which attempts to probe metabolic markers that possibly relate to varietal, geographical, environmental or even sensory discrimination of wines.
